Butter Lane - Chocolate Cupcakes

Ingredients
  • ½ lb butter
  • 2 ½ cups granulated sugar
  • 4 eggs
  • 1 splash of vanilla
  • 6 oz unsweetened melted chocolate
  • 1 ½ cups of buttermilk
  • ½ cup cold water
  • 1 tsp baking soda
  • 1 ½ tsp baking powder
  • 1 pinch of salt
  • 3 cups cake flour
Steps
  1. Combine butter and sugar in a mixing bowl. Mix until sugar and butter forms a cream.
  2. Crack eggs into a separate bowl, add a splash of vanilla extract to the eggs, then add the eggs to the mixing bowl. Mix on medium speed until mixture becomes light and fluffy.
  3. Add melted chocolate to mixing bowl and mix on medium speed until incorporated.
  4. Combing baking powder, baking soda, and salt with flour. Add half of the flour mixture, followed by buttermilk and water, then add the rest of the flour mixture.
  5. Mix until combined, but be careful not to over-mix.
  6. Scoop cupcakes and bake for 23 minutes at 300 degrees.
