Mom's Lemon Merangue Pie
Ingredients
  • 2⅓ cups sugar
  • 5 cups water
  • 6 egg yolks
  • juice from 3 lemons
  • 2 tbsp lemon rind
  • ⅔ cup cornstarch mixed in water and 1 tsp vanilla
Steps
  1. cook on medium heat until sugar is dissolved. Slowly add cornstarch and water made into slurry and add 1 tsp vanilla. cook until thickened Pour into baked pie shells.
  2. for meringue take the 6 egg white and add 1 to 1½ tbsp sugar for each egg white, add ¼ tsp cream of tarter and beat until stiff peaks form. apply the meringue to the pie filling to all edges and bake at 325° till meringue browns.
