Ingredients
- 2⅓ cups sugar
- 5 cups water
- 6 egg yolks
- juice from 3 lemons
- 2 tbsp lemon rind
- ⅔ cup cornstarch mixed in water and 1 tsp vanilla
Steps
- cook on medium heat until sugar is dissolved. Slowly add cornstarch and water made into slurry and add 1 tsp vanilla. cook until thickened Pour into baked pie shells.
- for meringue take the 6 egg white and add 1 to 1½ tbsp sugar for each egg white, add ¼ tsp cream of tarter and beat until stiff peaks form. apply the meringue to the pie filling to all edges and bake at 325° till meringue browns.
