Black Bean, Sweet Potato, Quinoa Veggie Burgers

Ingredients
- ⅓ cup raw quinoa
- 1 cup water
- 1 can of black beans (drained)
- 1 small or ½ of large baked sweet potato
- ½ cup roll oats or quick oats
- ½ cup red bell pepper (finely diced)
- ¼ cup green onion (finely diced)
- 1 teaspoon cumin
- 1 teaspoon paprika
- ¼ teaspoon salt (optional)
- ¼ teaspoon black pepper (or to taste)
- 1 minced garlic clove
Steps
- In a small saucepan, bring the quinoa and water to a simmer.
- Cover and cook over low heat for 12 to 15 minutes.
- Turn off the heat and let quinoa sit, covered, for 5 minutes longer.
- Remove the cover and fluff the quinoa with a fork.
- Add the drained black beans, sweet potatoes and spices to a large bowl and mash with a potato masher.
- Add the cooked quinoa, oats, diced red pepper, green onions to the bowl with the mashed beans.
- Mix well. Add more oats if the mixture is too wet to form into patties.
- Use a disher or food scoop to measure out even patties onto parchment paper on a large sheet pan. Flatten patties to about 1 inch high.
- Bake at 350 degrees for 15 minutes, flip burgers and bake another 15 minutes. Cooking time may be different depending on the size of your patties.
- Serve on one slice of Killer Dave's Seed Bread cut in half, dress with hummus spread, avocado, spinach, and sliced tomato.
