Black Bean, Sweet Potato, Quinoa Veggie Burgers
Ingredients
  • ⅓ cup raw quinoa
  • 1 cup water
  • 1 can of black beans (drained)
  • 1 small or ½ of large baked sweet potato
  • ½ cup roll oats or quick oats
  • ½ cup red bell pepper (finely diced)
  • ¼ cup green onion (finely diced)
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • ¼ teaspoon salt (optional)
  • ¼ teaspoon black pepper (or to taste)
  • 1 minced garlic clove
Steps
  1. In a small saucepan, bring the quinoa and water to a simmer.
  2. Cover and cook over low heat for 12 to 15 minutes.
  3. Turn off the heat and let quinoa sit, covered, for 5 minutes longer.
  4. Remove the cover and fluff the quinoa with a fork.
  5. Add the drained black beans, sweet potatoes and spices to a large bowl and mash with a potato masher.
  6. Add the cooked quinoa, oats, diced red pepper, green onions to the bowl with the mashed beans.
  7. Mix well. Add more oats if the mixture is too wet to form into patties.
  8. Use a disher or food scoop to measure out even patties onto parchment paper on a large sheet pan.  Flatten patties to about 1 inch high.
  9. Bake at 350 degrees for 15 minutes, flip burgers and bake another 15 minutes.  Cooking time may be different depending on the size of your patties.
  10. Serve on one slice of Killer Dave's Seed Bread cut in half, dress with hummus spread, avocado, spinach, and sliced tomato.
