Jumbo meatballs
I’ve always had trouble with cooking meatballs -- seems they’d always fall apart when browning in a sauté pan. These meatballs bake in the oven (or Instant Pot) and actually come out looking like meatballs!

Ingredients
  • 4 large eggs
  • ½ cup fresh French breadcrumbs
  • 6 tablespoons grated Parmesan cheese
  • 3 tablespoons olive oil
  • ¼ cup chopped fresh parsley
  • 3 large garlic cloves, minced
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 2 pounds lean ground beef (or 1 pound ground beef, 1 pound ground pork).
Steps
  1. Stir eggs, breadcrumbs, Parmesan cheese, 3 tablespoons olive oil, parsley, garlic, 2 teaspoons salt and pepper in large bowl to blend. Add ground beef and mix thoroughly. Form mixture into 2 ½-inch diameter meatballs. Makes about 14.
  2. Place meatballs on parchment paper lined pan and bake in oven at 350 for 15 to 30 minutes. Turn half way through to brown on both sides. Cooking time depends on size of meatballs.
  3. Instant Pot method: Spray bottom of Instant Pot lightly with olive oil spray. Arrange meatballs on bottom of pot. Add homemade or jar of sauce overtop, making sure meatballs are mostly covered. Set Instant Pot to Manual and cook for 7 minutes, with a 5 minute slow release before releasing the pressure.
