Salmon Quinoa Bake (One Pan Recipe)
Ingredients
  • 1 ½ tablespoons extra virgin olive oil
  • 1 tablespoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon onion powder
  • ⅛ teaspoon cayenne pepper
  • 1 salmon fillet ( 8 ounces), skin on (or two 4-ounce fillets)
  • 1 cup quinoa, uncooked
  • 2 cups water
  • 1 ½ cups mixed vegetables (frozen or canned - see note)
  • 1 can (796 ml) diced tomatoes, no salt added, well drained
  • 1 can (540 ml) black beans, no salt added, drained and rinsed
  • ¼ cup tex mex light cheese (or cheese of your choice)
