Parmesan Chicken Orzo
Ingredients
  • 1 teaspoon olive oil
  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon butter
  • 1 teaspoon garlic, minced
  • ¾ pound brussels sprouts (approx. 2 cups sliced brussels sprouts)
  • 1 ½ cup orzo
  • 2 cups chicken broth (or water), more as-needed
  • 1 teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • ½ teaspoon finely grated fresh lemon zest (more to taste)
  • ½ teaspoon lemon juice (more to taste)
  • 1 cup grated parmesan cheese
