Ingredients
  • 1 cup shredded apple
  • ½ cup craisins
  • ½ cup shredded carrots
  • ½ cup chopped walnuts or pecans
  • 1 cup fresh or thawed blueberries
  • ¼ tsp salt
  • 1 ¼ cups whole wheat flour
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp ground coriander
  • 1 egg
  • ½ cup oil
Steps
  1. 1. Preheat oven to 375 degrees. In small bowl, mix flour, baking powder, baking soda, cinnamon, coriander and salt. In large bowl, combine apple, craisins, carrot, nuts and blueberries. Stir the contents of the two bowls together until well mixed. In small bowl, beat together egg and oil. Add mixture into large bowl until mixed together. Put into paper cup lined muffin pan. Bake 22 minutes.
