Tofu Skin Rolls with Pork {Fu Pi Juan 腐皮卷}
Ingredients
  • 1 lb ground pork, home-ground pork preferred
  • 1 package of fresh tofu skin, cut into 6-inch x 6-inch squares as wrappers
  • 2 tbsp Shaoxing wine
  • 1 tbsp light soy sauce
  • 2 tbsp naturally aged soy sauce, or dark soy sauce
  • 1 tsp Zhenjiang vinegar
  • 1 egg
  • ½ tbsp arrowroot flour
  • ¼ tsp cane sugar
  • ¼ tsp ginger powder
  • 2 stalks of green onion, finely chopped
  • ¼ lb celery stems, finely chopped
  • ¼ lb carrots, finely chopped
