Vegan Chickpea Stuffed Avocados
Ingredients
  • 3 avocados, halved and pitted*
  • juice of half a lime, plus more lime wedges for serving
  • 1 can chickpeas, drained and rinsed
  • ¼ cup carrots, small dice
  • ¼ cup celery, small dice
  • ¼ cup green bell pepper, small dice
  • 2 scallions, sliced thin, whites and greens separated
  • ⅓ cup vegan mayonnaise
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon sugar
  • ¼ to ½ teaspoon salt (to taste)
  • black pepper
  • cherry tomatoes, to garnish (optional)
