Steamed Veggies over Brown Rice
Inspired by Valley Cafe Ellensburg, WA

Ingredients
  • 1 cup brown rice
  • broccoli
  • cauliflower
  • sliced carrots
  • red cabbage
  • grated cheddar and/or jack cheese
  • hulled pumpkin seeds
  • a little oil
  • salt
Steps
  1. Prepare brown rice - for more flavor, cook in broth
  2. Chop veggies into large bite sizes. Steam til just tender
  3. Meanwhile, toss pumpkin seeds in a little oil and salt and toast in oven - keep an eye on them, they burn quickly!
  4. Serve steamed veggies over rice, top with cheese, seeds and salt and pepper. Serve with a side of whole wheat or spelt toast
