Keto Chicken Pizza Crust
Made this in June 2019. About 260 calories in just the crust, 1 carb. Maybe add some yeast for a "bread" flavor? Not sure if that would work. Consider almond flour to help break up the thai-bounce-meatball texture a bit. Maybe could use more cream cheese or sour cream too? Does it even need egg? Either way, it's a really good little pizza base!!

Ingredients
  • 108g skinless chicken breast
  • 10g cream cheese
  • 10g egg yolk (I used 2 quail eggs that were a bit dried up, so mostly just yolks)
  • ΒΌ tsp baking powder
  • salt and pepper to taste, and whatever else you want to flavor with
  • (add yeast or almond flour next time??)
Steps
  1. Cut chicken into cubes and blend with all the other ingredients until it's paste-y.
  2. Spread onto parchment paper to desired size and thickness. Pre cook in oven, 350F, 5ish minutes, until you can lift it off the parchment and flip it over.
  3. Add sauce and toppings. Pop back into oven under the broiler until cheese is bubbly.
