Chukar Parmesan and Orzo Pasta

  • 6 boneless skinless chukar breasts
  • ½ cup flour
  • 2 eggs + 1 tbsp water
  • ½ cup plain breadcrumbs
  • ½ cup panko breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tsp dried parsley
  • 1 tsp kosher salt
  • ¾ cup olive oil
  • 1 ½ cups orzo pasta, cooked
  • 2 cups pasta sauce
  • 6 slices brie or fresh mozzarella cheese, ¼ inch in thickness
  • 1 tbsp grated Parmesan cheese
  • 1 tbsp flat leaf parsley, chopped
