Ingredients
  • 2 to 3 cans regular coconut milk (don't use light unless you don't want it yummy )
  • 1 can chicken broth (about 8oz)
  • 1.5 to 2lbs chicken tenders (or breast)
  • 1 bell pepper
  • 1 to 2 cans of mushrooms or 1 pack fresh mushrooms (I used Bella, but most recipes use the can)
  • tomatoes (1 large, or 5/6 cherry ones, which I used)
  • 2 tsp lemongrass paste (gourmet garden brand in a tube from fresh veggie section in any grocery store)
  • 2 lemons, juiced (I didn't have lime, would have preferred lime)
  • 2 to 3 tblspn fish sauce (according to your taste)
  • 1 tsp red pepper flakes (according to your taste)
  • 2 tsp ginger (minced)
  • 1 to 2 tblspn brown sugar (according to your taste)
  • 1 tblspn cilantro
  • salt (according to your taste)
