Zucchini Fritters

Ingredients
  • 2 zucchini’s, coursely grated
  • 2 eggs, lightly beaten
  • 1 cup spinach, shredded
  • ¼ cup basil, finely chopped
  • ½ cup almond meal
  • ½ tsp cumin
  • ½ tsp ground coriander
  • 1 TBS psyllium husk
  • Salt and pepper to taste
Steps
  1. 1. Place zucchini and salt in colander and leave for 10 mins. Squeeze out liquid.
  2. 2. In a bowl combine with all other ingredients.
  3. 3. Heat oil in fry pan, add large spoonfuls of mixture. Cook for 3 mins, flip and cook for a further 2 to 3 minutes until golden
