Blueberry cheesecake bites

Ingredients
  • 80 g blueberries, fresh or frozen
  • 1 tablespoon vanilla extract
  • 8 oz cream cheese, softened
  • 4 oz butter, softened
  • 2 tbsp almond flour
Steps
  1. Place blueberries into a bowl and mash using a fork or place in a blender for a smooth texture. Add the vanilla extract and mix well. Add the softened butter and cream cheese. Mix until well combined.
  2. Sprinkle almond flour into bottoms of silicon molds.
  3. Spoon the mixture into small silicon molds. Place in the freezer for about 2 hours or until set.
  4. When done, unmold the bites and place into a container. Keep in the freezer and enjoy any time!
