Pork: Apple-Glazed Ham with Sweet Potatoes

  • 4 Vidalia onions

  • ½ cup apple jelly or peach preserves
  • 1 tablespoon stone-ground mustard
  • 2 teaspoons finely chopped fresh rosemary leaves
  • ¼ cup extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
