Sam Mannering's Spring Salad of Porterhouse, Asparagus, Peas, Ricotta and Mint
Ingredients
  • 3 large porterhouse or sirloin steaks, at room temperature
  • Salt and pepper
  • Olive oil
  • 4 cloves of garlic, sliced
  • 1 large bunch of asparagus, ends removed and sliced lengthways
  • 2 cups of baby peas, defrosted if frozen
  • Zest and juice of 1 lemon
  • About 100g ricotta
  • Handful of fresh mint, roughly chopped or torn
