Sweet Potato, Lentil and Pea Curry

Ingredients
  • 1tbsp olive oil
  • 1 onion (sliced)
  • 3 garlic cloves (I like garlic)
  • 2 sweet potatoes (these ones were pretty large, about 650g total) (cut in bite sized pieces)
  • 6 tbsp red lentils
  • 1 can of coconut milk (400ml)
  • 300ml or so of water or broth (you may need more if you want it to be thinner)
  • about a cup of frozen peas
Steps
  1. Heat up the olive oil in a deep fying pan or a wok (or even a sauce pan), throw in the onions and garlic, sauté it for a little bit until it's golden. Add curry powder and fry for a minute. This is to taste really, I just keep adding curry powder while cooking, until it's curry(-ful?) enough for me (maybe 2 to 3 tbsp?)
  2. Add the lentils and sweet potatoes and cook for 2 to 3 minutes.
  3. Add the coconut milk and water (or broth), and some salt, black pepper, and I like to add some cayenne too. Don't go crazy with the salt here, it's best to adjust the flavours in the end :)
  4. Let it cook for 15 to 20 minutes until the potatoes are soft (Or as you want them to be)
  5. Add the frozen peas and cook until they're done Adjust for salt, curry powder or heat and you're good to go!
