Ginger Beef Soup

Ingredients
  • 1 quart home-canned beef stock with meat
  • 1 tsp tamari, Braggs, coconut aminos, etc.
  • 1 leek or bunch scallions, chopped
  • 3 slices of ginger or 1 Tbl chopped
  • 2 large carrots
  • 4 c bok choi, chopped
  • 1 bag mung bean sprouts
Steps
  1. Saute leek and ginger until translucent.
  2. Add carrots and simmer 5 mins.
  3. Add bok choi and simmer 5 mins.
  4. Take off heat and add bean sprouts.
Notes
  • Soy sauce and mung beans are not really paleo.
