Ginger Beef Soup
- 1 quart home-canned beef stock with meat
- 1 tsp tamari, Braggs, coconut aminos, etc.
- 1 leek or bunch scallions, chopped
- 3 slices of ginger or 1 Tbl chopped
- 2 large carrots
- 4 c bok choi, chopped
- 1 bag mung bean sprouts
- Saute leek and ginger until translucent.
- Add carrots and simmer 5 mins.
- Add bok choi and simmer 5 mins.
- Take off heat and add bean sprouts.
- Soy sauce and mung beans are not really paleo.
