Jan's Sourdough Parmesan Crackers

Ingredients
- 1 C sourdough starter (unfed)
- 1 C AP flour
- ½ C parmesan
- ⅓ C softened butter
- 1 t. salt
- 2 t. or more of herbs & spices: whatever you want...I used turmeric because I like the color it imparts and onion powder. Maybe I added a little Tajin seasoning too.
Steps
- Mix everything together very well, shape into 2 chunky rectangles, wrap each in plastic, and refrigerate for at least 4 hours (or up to several days)
- Roll the dough out on parchment paper very thin ( make sure it will fit on a baking sheet.) I sprinkled parmesan on the parchment before rolling it out, and also on top of the dough. Transfer the parchment with dough to the sheet, cut into whatever shape you like, and prick all over with a fork. At this point, I did one last sprinkling of parmesan all over so they would be nice and cheesy.
- Bake at 375 for about 15 to 18 minutes.
