Kale and White Bean Pasta with Parmesan

  • ½ yellow onion, diced
  • 2 to 3 cloves garlic, minced
  • 1 (15 oz) can white beans, drained and rinsed
  • Juice of 1 lemon, plus more for serving if desired
  • ¾ cup grated parmesan cheese, like the kind you put on pizza
  • Salt and pepper, to taste
  • Red pepper flakes, to taste

  • 1 tablespoon butter
  • 1 cup chopped walnuts
  • ½ cup panko breadcrumbs
  • 1 teaspoon fresh thyme leaves (optional)
