Clean Eating Tangy Three Bean Salad
Ingredients
  • 1 can no salt added cannellini beans
  • 1 can no salt added kidney beans
  • 1 can no salt added garbanzo beans (chickpeas)
  • 1 cucumber, seeded and finely diced
  • ½ red onion, finely minced
  • ¾ cup fresh parsley, finely chopped (using fresh parsley in this recipes is a must - no dried stuffed!)
  • ⅓ cup apple cider vinegar
  • 1 tbsp honey
  • 2 ½ tbsp extra virgin olive oil
  • 1 ½ tsp salt
  • 2 to 3 cloves garlic, minced (if you’re a garlic lover feel free to add in another clove)
  • 1 tbsp dijon mustard
