Ingredients
  • 3 beaten eggs
  • 1 C oil
  • 2 C sugar
  • 2 C grated zucchini
  • 2 T vanilla extract
  • 3 C flour
  • 1 t baking soda
  • ½ t baking powder
  • 1 t salt
  • 1 t cinnamon
  • ½ C toasted nuts
Steps
  1. Preheat oven to 350°.
  2. Combine eggs, oil, sugar and vanilla. Stir in zucchini. Sift dry ingredients together and stir into egg mixture. Fold in walnuts.
  3. Grease and flour 2 8" loaf pans. Pour batter into loaf pans and bake for one hour or until done.
