Makes around 2.5 litres
Ingredients
  • 15 to 20 elderflower heads
  • 2 lemons sliced
  • 50 to 75g citric acid
  • 2 ½ litreswater
  • 1kg sugar
Steps
  1. Check elderflowers for dirt and little insects - don't wash!
  2. Boil the water and sugar
  3. Add the Citric Acid to a large mixing bowl
  4. Pare off the lemon peel, add to the bowl
  5. Chop the remaining lemon into slices, add to the bowl
  6. Tip the water and sugar mixture into the bowl
  7. Add the elderflowers and push into the water.
  8. Cover the bowl and leave overnight. Stirring occasionally.
  9. Decant using a jug into bottles through a muslin cloth.
