Fresh Broccoli Tomato Onion Feta. Perfect for a hot summer day

Ingredients
  • 3 heads of broccoli (approx. 1lb)
  • 6 oz feta cheese
  • 2 tomatoes
  • ½ onion
  • ½ can of black olives
  • 1 tsp garlic
  • 1 tsp salt
  • 1 tsp lemon pepper
  • 4 tablespoon balsamic vinegar salad dressing
Steps
  1. Bring water in steamer to a boil.
  2. Turn off the burner but leave steamer in place.
  3. Add broccoli to steamer basket for 5 minutes.  Broccoli should be bright green and crisp.
  4. Run broccoli in the steamer basket under cold water to cool.
  5. Cut broccoli and stalks into bite size pieces. Add to bowl.
  6. Chop tomatoes and onion, olives add to bowl.
  7. Crumble feta into bowl.
  8. Add dressing to salad and mix to combine.
  9. Refrigerate until chilled.
