Roasted Miso Garlic Cauliflower
Ingredients
  • 1 head cauliflower (medium to large; 2.3 lb, 1 kg)
  • 4 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc)
  • ¼ to ½ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
  • subheading: Miso Garlic Sauce:
  • 2 Tbsp miso (I use Hikari Miso Organic White Miso (you can buy on Amazon). If you use other kinds of miso, adjust the amount of maple syrup based on the saltiness of miso.)
  • 1 Tbsp maple syrup
  • 1 tsp soy sauce
  • 1 clove garlic
  • 1 knob ginger (you will need ½ tsp of grated ginger)
