Healthy Gingerbread Cookies
These roll out perfectly you do t even need extra flour. Soft on inside crunchy on the out.
Ingredients
  • 1c oat flour
  • ½c coconut flour
  • 1tbls cinnamon
  • 1tsp clove
  • ½ tbls nutmeg
  • 1tbls ginger
  • 1tsp baking soda
  • 1 to 2c to ¾c coconut sugar
  • Whisk until well mixed
  •  
  • subheading: In food processor :
  • 3tbls vegan or reg cream cheese
  • 3tbls softened vegan or reg butter
  • 2flax eggs (2tbls ground flax 4tbls warm water and let gel)
  • ⅓c almond milk
  • 1tbls vanilla
  • ¼tsp almond extract
  • Combine wet and dry ingredients until dough ball forms. Wrap in plastic and chill hours. Roll out on parchment and cut out ginger men. Bake at 350 on parchment for 15min. Let cool before frosting.
