Easy Vegan Chicken Cutlet Sandwich

Ingredients

  • 1 egg replacer (I use Bob's Red Mill)
  • 6 ounces (170g) chickpeas, drained and rinsed
  • Liquid from chickpea can about ½ cup (120ml)
  • ½ block (4 ounces/113g tempeh)

  • 2 slices white bread
  • 1 tablespoon vegan mayo
  • Iceberg lettuce shredded, amount to your liking for your sandwich
