Arroz Atollado Colombiano (Colombian-Style Pork Risotto)
Ingredients

  • ½ teaspoon salt
  • ½ teaspoon ground cumin
  • ½ teaspoon fresh ground pepper
  • ¼ cup chopped fresh cilantro
  • subheading: RICE:
  • 1 and ½ cups white rice
  • ¼ teaspoon salt
  • 2 cups potatoes cut into 1 and ½- inch pieces
  • 2 chorizos or smoked sausage, sliced
  • 3 tablespoons chopped fresh cilantro for garnish
