  • ¾ cup peeled, seeded and finely chopped cucumber
  • ⅓ cup very thinly sliced red onion
  • 2 tablespoons chopped fresh dill
  • Pinch of red pepper flakes
  • 1 tablespoon fresh lemon juice
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • ⅛ teaspoon ground black pepper
  • 3 ounces watercress leaves, large stems removed
  • 3 ounces shaved pecorino cheese
