Pan-Seared Cod in Tomato White Wine Sauce
Ingredients
  • 2 Tbsps olive oil, ghee, or avocado oil
  • 3 cloves fresh garlic, finely minced
  • ½ tsp crushed red pepper flakes
  • 2 Roma tomatoes, diced small
  • 1 pint cherry tomatoes, halved
  • 1 cup tomato purée
  • ¼ cup dry white wine
  • ½ tsp sea salt, or to taste
  • ¼ tsp fresh ground black pepper, or to taste
  • ½ cup fresh basil leaves, finely chopped
  • 2 Tbsps fresh squeezed lemon juice
  • 1 tsp fresh lemon zest
  • subheading: For the cod:
  • 2 Tbsps olive oil, or avocado oil
  • 1-½ lbs OR 4, 6 ounce fresh cod fillets
  • sea salt and pepper
