Vegetarian Sloppy Joes

Ingredients
  • subheading: Lentils:
  • 2 Cups Water
  • 1 Cup Green Lentils, Rinsed well
  •

  • 1 ½ Tbls Olive Oil
  • ½ White Onion, Medium, Minced plus more for serving
  • 2 Cloves Garlic, Minced
  • ½ Green Bell Pepper, Diced
  • Sea Salt and Black Pepper to taste
  • 1 Can (15oz) Tomato Sauce
  • 2 Tbls Sugar
  • 2 Tbls Worcestershire Sauce (Vegetarian)
  • 2 Tsp Chili Powder
  • 1 Tsp Ground Cumin, or more to taste
  • ½ Tsp Smoked Paprika
  • Whole Wheat Hamburger Rolls
Steps
  1. In a small saucepan add the water and the rinsed Lentils.  Heat over Medium-High heat.  Bring to a low boil, then reduce heat to a simmer and cook uncovered for about 18 minutes or until tender.  The water should have a constant simmer (not boil.)  Drain off any excess liquid and set aside.
  2. Heat a large skillet over medium-high heat.  Once hot add oil, onion, garlic, and bell pepper.  Season with a pinch of say and pepper.  Stir to combine.  Saute for 4 to 5 minutes, stirring frequently or until the peppers and onions are tender and slightly browned.  Next add the tomato sauce, sugar, Worcestershire Sauce, Chili Powder, cumin, and paprika.  Stir to combine.
  3. Add the cooked lentils to the skillet, stir to combine.  Continue cooking the mixture over medium-low heat until completely warmed through and thick.  Stir occasionally about 5 to 10 minutes.
  4. Serve over toasted buns with sliced onions.
  5. Best when served fresh though leftover sloppy joe mixture will keep in the refrigerator up to 3 days.  Reheat in the microwave or on the stovetop adding water if the mixture becomes too thick.
