Ingredients
- subheading: Lentils:
- 2 Cups Water
- 1 Cup Green Lentils, Rinsed well
- subheading: Sloppy Joes:
- 1 ½ Tbls Olive Oil
- ½ White Onion, Medium, Minced plus more for serving
- 2 Cloves Garlic, Minced
- ½ Green Bell Pepper, Diced
- Sea Salt and Black Pepper to taste
- 1 Can (15oz) Tomato Sauce
- 2 Tbls Sugar
- 2 Tbls Worcestershire Sauce (Vegetarian)
- 2 Tsp Chili Powder
- 1 Tsp Ground Cumin, or more to taste
- ½ Tsp Smoked Paprika
- Whole Wheat Hamburger Rolls
Steps
- In a small saucepan add the water and the rinsed Lentils. Heat over Medium-High heat. Bring to a low boil, then reduce heat to a simmer and cook uncovered for about 18 minutes or until tender. The water should have a constant simmer (not boil.) Drain off any excess liquid and set aside.
- Heat a large skillet over medium-high heat. Once hot add oil, onion, garlic, and bell pepper. Season with a pinch of say and pepper. Stir to combine. Saute for 4 to 5 minutes, stirring frequently or until the peppers and onions are tender and slightly browned. Next add the tomato sauce, sugar, Worcestershire Sauce, Chili Powder, cumin, and paprika. Stir to combine.
- Add the cooked lentils to the skillet, stir to combine. Continue cooking the mixture over medium-low heat until completely warmed through and thick. Stir occasionally about 5 to 10 minutes.
- Serve over toasted buns with sliced onions.
- Best when served fresh though leftover sloppy joe mixture will keep in the refrigerator up to 3 days. Reheat in the microwave or on the stovetop adding water if the mixture becomes too thick.
