Ingredients
  • 3 lbs yellow onions halved & thinly sliced
  • ¼ cup butter
  • 2 tablespoons olive oil
  • 3 large cloves garlic, minced
  • Kosher salt & ground pepper
  • 3 tablespoons sherry wine
  • 2 tablespoons fresh thyme, leaves only ¾ inch
  • 5 cups beef broth
  • 2 tablespoons soy
  • French bread (day old if possible) cut into ¾”  thick slices, if using fresh: cut into ¾ slices as well and put into a 350 oven about 10 minutes
  • One pound Gruyere or Swiss Cheese, grated on the larger holes of a box grater
