Spinach, Mushroom, and Artichoke Casserole
Ingredients
  • 2 T, plus 2 tsp, unsalted butter
  • ¾ cup chopped yellow onions
  • ½ tsp salt
  • ½ tsp pepper
  • 2 tsp minced garlic
  • 1 lb. button mushrooms, cleaned and sliced
  • 2 (10oz.) pkgs. frozen chopped spinach, thawed and squeezed dry
  • 2 (14oz.) cans artichoke hearts, drained and quartered
  • 1 (15oz.) container ricotta
  • 1 cup grated monterey jack
  • ½ cup crumbled feta
  • 6 eggs
  • ⅛ tsp nutmet
  • ¼ cup dried bread crumbs
  • ½ cup parmesan
