Whole30 Copycat Chipotle Salad Bowl
Ingredients
  • 5 oz mixed greens, chopped romaine, or combination of both

  • 2 large green bell peppers stem and seeds removed, sliced thin
  • 1 large red onion skin removed and cut into thin slices
  • ¼ cup olive or avocado oil, divided use half with veggies, half with chicken
  • 2 teaspoons oregano, divided use half with veggies, half with chicken

  • 1 to 1.5 pounds boneless skinless chicken breast cut into small ½" pieces
  • 1 tablespoon chili powder use ancho chili powder for more of a kick and authentic taste
  • 1 tablespoon dehydrated minced onion
  • 1 teaspoon ground cumin
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • subheading: Toppings:
  • 2 cups salsa see notes
  • 2 to 3 cups guacamole see notes
  • 3 cups Cilantro Lime Caulirice or steamed Caulirice optional, see notes
