Julie’s Egg Bake
Ingredients
  • 12 eggs
  •  
  • A few cups chopped vegetables
  •  
  • 1 cup frozen hash browns/tots
  •  
  • ½ Block cream cheese
  •  
  • 8oz feta
  •  
  • Some cottage cheese (optional)
  •  
  • Salt & pepper to taste
Steps
  1. Preheat oven to 350°F
  2. Sauté the veggies (zucchini, peppers, spinach work well, anything that can be softened when cooked)
  3. Put the eggs and whatever blend of cheeses you are using in a bowl, with whatever herbs and spices you want, mix that up
  4. Put the veggies in the bowl and mix everything together.
  5. Spray a casserole/baking dish with oil, put the shredded potatoes on the bottom (they can be frozen), and then put the egg mixture on top.
  6. 350°F for about an hour, it can take a while to bake because there is so much moisture, so that hour is an estimate give or take.
