Marinated Chickpeas with Bell Peppers and Cucumbers
Ingredients
  • ¼ cup Extra Virgin Olive Oil
  • 2 Tbsp Red Wine Vinegar
  • 2 tsp Dijon Mustard
  • 1 tsp Honey
  • 1 tsp Italian Seasoning
  • ½ tsp Paprika
  • ½ tsp Salt
  • ¼ tsp Black Pepper
  • 2 14 oz cans Garbanzo Beans / Chickpeas, drained and rinsed
  • 1 cup finely diced Red Bell Peppers
  • 1 cup finely diced Cucumbers (preferably a seedless variety like Persian cucumbers)
  • ¼ cup finely diced Red Onion
  • Fresh Basil, chopped (optional)
