Easy Vegan Ferrero Rocher Truffles

Transitioning from 80% raw food to Whole Food Plant Based diet (WFPB) ***Cooking without oil and adapting my recipes accordingly***

1 cup roasted hazelnuts, coarsely chopped

22 roasted WHOLE hazelnuts (1 per Ferrero Rocher)

subheading: Chocolate Batter:

2 avocados, ripe, but firm

¾ cup favorite chocolate protein powder (I use Orgain's Creamy Chocolate Fudge Protein Powder)

¼ cup unsweetened cocoa powder

¼ cup maple syrup, 100% pure

1 ½ tsp vanilla extract, 100% pure

¼ tsp kosher salt

subheading: Chocolate Coating:

¼ cup 2 tbsp dark chocolate chips (I use Lily's Dark Chocolate Stevia-Sweetened Baking Chips)

2 tbsp coconut oil
