ONE PAN CHEESY CHICKEN TACO SKILLET

Ingredients
  • 2 cups shredded rotisserie chicken
  • ½ tsp ground cumin
  • ½ tsp dried oregano
  • 1 cup jarred red enchilada sauce
  • ½ cup chunky salsa
  • ¼ cup water
  • 4 tortillas, cut into 1-inch strips
  • 1 cup shredded mexican cheese blend cheese
  • ½ cup greek yogurt or sour cream
  • ¼ cup sliced green onions
  • ¼ cup chopped cilantro
  • Guacamole
Steps
  1. 1) In large skillet add chicken and sprinkle with cumin and oregano.
  2. 2) Add enchilada sauce, salsa, and water, bring to a simmer over medium heat for a couple of minutes to let sauce thicken.
  3. 3) Stir in tortilla strips and sprinkle with cheese; remove from heat and and cover until cheese melts.
  4. 4) Top with greek yogurt, guacamole, cilantro, and green onions.
