Pressure Cooker Beef Stew using BRISKET (Amy + Jacky)
Might be a good option if using round rather than chuck.
Ingredients
  • 1½ pound (680 g) whole beef brisket ( for beef chuck roast, see this recipe)
  • Kosher salt and pepper
  • 2 tablespoons (30 ml) olive oil, divided
  • 2 small onions, finely chopped
  • 3 garlic cloves, crushed and chopped
  • 2 celery stalks, chopped
  • 2 carrots, chopped
  • A dash of sherry wine
  • 1 tablespoon (8 g) flour
  • 2 bay leaves
  • A few pinches of dried thyme
  • 3 russet potatoes or 3 Yukon gold potatoes, cubed
  • subheading: Chicken Stock Mixture:
  • 2 cups (500 ml) unsalted chicken stock
  • 1 tablespoon (15 ml) Worcestershire sauce
  • 1 tablespoon (15 ml) light soy sauce (not low sodium soy sauce)
  • 1 tablespoon (15 ml) fish sauce
  • 3 tablespoons (50 ml) tomato paste
