Fusilli with 'Nduja, Cavolo Nero and Lemon Pangrattato

  • cavolo nero, 2 bunches, stalks removed, leaves chopped
  • 350g fusilli
  • 80ml extra virgin olive oil
  • 1 large red onion, finely chopped
  • 3 garlic cloves, crushed
  • 2 tbs nduja
  • ½ cup grated pecorino
  • ½ cup flat-leaf parsley leaves

  • 2 lemons
  • 1 ½ cups breadcrumbs from day-old bread
  • 5 thyme sprigs, leave picked
  • extra thyme, to serve
