One Pot Vegetarian Chilli Mac
Ingredients
  • 500ml (~ 2 cups) tomato soup or passata
  • 1 tbsp oil
  • 70g (~ ½ cup) frozen diced onions - equivalent to 1 medium onion, diced
  • 125g (~ 1 cup) frozen sliced peppers - equivalent to 1½ bell peppers, sliced
  • ½ mild red chilli, finely chopped
  • 4 medium mushrooms, diced
  • 120g cooked kidney beans (½ a drained 400g tin, or ~ ¾ cup)
  • ½ tsp smoked paprika
  • ½ tsp mild chilli powder (more or less to taste)
  • ¼ tsp ground cumin
  • Salt
  • Black pepper
  • 150ml (~ ½ cup) water
  • 180g (~ 6.5oz) uncooked pasta (I used spiralli)
  • 80g cheddar cheese, grated (~ 1 cup grated)
  • To garnish: fresh coriander (cilantro), chopped spring onions (optional)
