Potato and Swiss Chard Gratin
Ingredients
  • 2 pounds red or yellow potatoes
  • 1 cup plain almond milk
  • ½ cup white or cannellini beans
  • 2 tablespoons olive oil
  • 1 ½ teaspoons soy sauce or tamari
  • 4 to 6 cloves of garlic, minced*
  • 1 small bunch of swiss chard**
  • 1 medium yellow onion, chopped
  • 1 tablespoon lemon juice
  • 1 ½ tablespoons fresh thyme, minced
  • salt and pepper
  • spray oil
