How to cook sauced pasta in the instant-pot
Ingredients
  • I like a veggie filled pasta dish so I use th e saute function to saute diced onions, carrots and peppers in the pot using broth or water as a first step. I just sweat them a little to begin then add a few cloves of diced garlic for just 30 seconds or so to get the raw taste out of it too. Then I add a few spices to bloom them. Oregano, basil, paprika, etc... Then I turn the pot off. I add my pasta, 1 pound. I use a thick hearty pasta like penne usually. It holds up well to pressure cooking with ingredients. DO NOT STIR.. Then I add my sauce. I usually make my own. But you can add a jarred sauce. Add about 28 -32 ounce jar or the equivalent. The pasta sauce should sit on top of the pasta. DO NOT STIR IT IN! Then fill up the jar with water and pour the water into the pot. It will filter down into the pot and sit on the bottom. This water will be used by the pot to create pressure and it will cook the pasta and warm the sauce. Then if you want meat balls. Put them in on top of the sauce. Just let them sit on top of everything in the pot. Close up the pot and set the pot to LOW PRESSURE for half the time indicated on the bag of pasta. When the pot beeps do a QUICK RELEASE. Then stir the ingredients together. At that time I like to add tender veggies like frozen peas, fresh broccoli, spinach etc. The steam in the pot will heat and cook the tender veggies to a crisp tender texture.
