Servings: Makes about 9 dozen round coins
Ingredients
  • 250 Parmesan grated finely
  • 250 Sharp Cheddar shredded
  • 250g salted butter room temperature
  • 3-½ cups plain flour
  • ½ to 1 teaspoon cayenne pepper
Steps
  1. In large mixing bowl beat together cheeses and butter
  2. Fold in 2 cups of flour and cayenne beat on low until combined
  3. Transfer dough onto lightly floured work surface
  4. Knead in the remaining flour
  5. Form into 3 logs about 12" long by 1-½" diameter
  6. Wrap in glad wrap and refrigerate for 2 hours
  7. Preheat oven 375deg F 190deg C,
  8. Spray 3 baking sheets/trays with vegetable spray
  9. Unwrap chilled logs and cut into ¼" rounds
  10. Bake middle rack for 8 to 10 minutes until golden brown
