Thai Chicken Lettuce Cups
Ingredients

  • 1 lb of chicken breast, cubed Gem lettuce, bib lettuce, or even romaine lettuce will work
  • 1.5 cups julienned carrots (I used pre-juilienned)
  • 1 small yellow onion chopped
  • 2 cubes of mashed garlic, or 2 tsp or 3 cloves
  • 2 tsp ginger or 2 cubes of mashed ginger
  • ¼ cup Sweet chili sauce (Trader Joe’s)
  • ¼ cup soy sauce or gluten free soy sauce or coconut aminos!
  • ¼ cup cashews
  • 1 sprig of green onion chopped
  • Sesame oil for cooking- you can also use avocado or olive oil Handful of chopped cilantro
  • Optional Furikake seasoning :)
