Waikiki Meatballs

Ingredients
  • 1 ½ pounds ground beef
  • ⅔ saltine cracker crumbs
  • ⅓ minced onion
  • 1 egg
  • 1 ½ teaspoon salt
  • ¼ teaspoons ginger
  • ¼ cup milk
  • ⅓ cup chopped green bell pepper
  • 2 tablespoons corn starch
  • ½ cup brown sugar
  • 1 can ( 13 ½ oz) pineapple tidbits, drained, reserve syrup
  • ⅓ cup vinegar
  • 1 tablespoon soy sauce
Steps
  1. Mix throughly, beef, cracker crumbs, minced onion, egg, salt, ginger, milk. Shape into balls and place on broiler pan which has been sprayed with cooking spray. Place in 350º oven for 30 minutes, turning half way through.
  2. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar, & soy sauce until smooth. Pour into large pot; cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Add meatballs, pineapple tidbits & pepper and heat through.
