Egg ’N’ Grogg Pie from Four & Twenty Blackbirds
Ingredients

  • 1 ⁄4 teaspoon ground cinnamon
  • 1 pinch ground cloves
  • 3 large eggs
  • 1 cup heavy cream
  • 3 tablespoons dark rum
  • 1 ⁄2 teaspoon fresh lemon juice
  • subheading: GINGERSNAP CRUMB CRUST:
  • 1 cup gingersnap crumbs, from about twenty 2-inch cookies
  • 2 tablespoons granulated sugar
  • 1 ⁄4 teaspoon kosher salt
  • 4 tablespoons unsalted butter , melted
  • 1 large egg white, whisked with 1 teaspoon cold water (optional)
