Quick and Easy Loaded Baked Potato Soup
Ingredients
  • The first thing you are going to want to do is scrub 6 to 7 russet potatoes (or 3 large baker potatoes), put them in your Baker in the microwave for 15 mins.
  • While those are baking prep your other ingredients…
  • 1 lb of bacon, cooked and chopped
  • 3 green onions, chopped (reserve a bit for topping)
  • 8 oz cream cheese
  • 4 tablespoons butter
  • 3 cups milk
  • 8 oz shredded cheese (I used medium cheddar) reserve 2 oz for topping
  • sour cream for topping
  • salt and pepper to taste
  • Once your potatoes are done throw in your green onions, cream cheese and butter.  Mash those all up well. I use the mix n’ chop from Pampered Chef.
