One-Pot Black-Eyed Peas and Rice
Ingredients
  • 1 teaspoon extra virgin olive oil
  • 1 large onion, diced
  • 2 carrots, diced
  • 3 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 cup dried black-eyed peas
  • ½ cup white rice
  • 1 teaspoon each: dried parsley, dried oregano, dried crushed red pepper
  • ¼ teaspoon each: ground black pepper and ground cumin
  • ¼ cup tomato paste
  • 2 to 2 ½ cups low-sodium vegetable broth (enough to cover everything + a bit more)
  • Juice from one small lemon (about 2 tablespoons)
  • Sea salt, to taste
